Chicken Inasal

Inasal means to grill, or to barbeque. Condo living has quite a few restrictions especially when grilling in winter. As much as I was craving for JT’s Manukan for awhile now – I created a makeshift Chicken Inasal recipe that will satisfy my appetite until my next visit to the Philippines.

Ingredients:
7 Cloves of Garlic
1 cup Lemon Juice
1/4 cup Maple Syrup (or Brown Sugar)
Salt and Pepper
1/2 cup Achuete Oil (Annato Paste) *Use the extra achuete oil to make garlic fried rice.

Preheat the oven to 375º F then, roast the chicken for about 40 minutes or until it’s cooked.

Best served with Garlic Fried Rice and Cold Beer or Lemongrass Iced Tea

Marinate the chicken for at least 3 hours or overnight
Prepare the achuete oil
Baste the chicken with the achuete oil before roasting
Chicken Inasal is best served with garlic fried rice
